Judy's Pumpkin Pie   makes 2 pies worth

Ingredients: 30 oz Organic canned pumpkin
                    1 cup Organic sugar
                    4 eggs beaten good
                    2 heaping teaspoons of organic cinnamon
                    1 heaping teaspoon of organic all spice
                    1 teaspoon organic ginger
                    2 c. of evaporated milk(organic if you can find)
                    
Directions:    1. Mix pumpkin, sugar, and spices well in large mixing bowl
                    2. add beaten eggs and mix well
                    3. add milk slowly as mixing on low fluffing mixture- not beating hard
                    4. pour into unbaked crust
                    5. Bake in preheated oven 425 degrees fahrenheit-cook for 10 min
                    6.Reduce heat to 350 degrees farenheight to finish baking-
                        check after 30-40 min or until firm.- check w/ sharp thin knife,
                         when it comes out clean- it's done! Enjoy!
Nanny's Pie Crust: the best I've ever had! makes 1 pie crust
                    1. Take pie plate.   
                    2. put 1 & 1/2 cups of organic whole grain flour (I use oat and wheat flour) into pie plate 
                    3. toss in a pinch of salt and 1 tablespoon of organic sugar
                    4.  mix dry ingredients in pie plate
                    5. put 2 tablespoons of organic cold milk( I overflow mine a bit)
                    6. add 1/2 cup organic olive oil-or safflower oil- or canola oil
                    7. mix all ingredients in pie plate and press into place
                    This is a very flaky, light, healthy pie crust 
                      
A little note on organic: I personally use organic because it's grown without chemical pesticides and the result is the flavor is far superior in my opinion. Whole grain flour is used because it's not modified and you get the full nutrition of the flour you are using, and also in my opinion it has a better flavor. This is the way people used to eat before preservatives and shelf life was such a concern. Fresh, more healthy. Sounds good to me.
